SICILIAN SAVOURS AND THE REINVENTION OF THE PUTÍA

A few years ago an Italian politician defined, somewhat unhappily, choosy young Italians. Although such drastic generalizations are always a little risky, it is probable that he was referring to a part of Italians culturally sons of the legacy of the last century, according to which the degree should necessarily correspond to a job reserved for a particular lineage. In short, the message that the definition of fact has conveyed is that young Italians would snuff less prestigious jobs and unsecured contracts. However, the facts, yesterday as today, describe a reality in which young people, despite a cultural level that fifty years ago would have opened up a few doors of a certain credit, today accept the most diverse works and the most imaginative contracts or, rolling up the sleeves, use their knowledge to "invent" a job.

Sicilian Savours is the result of the initiative of the young owner who, by no means choosy, has financed his project with a series of corollary activities exploiting the scientific knowledge deriving from his university studies. By networking with a number of local producers, Sicilian Savors has allowed them to access a market that they would otherwise be closed to, due to lack of time or expertise.

Sicilian Savours is in fact prefigured as an putìa Sicilian online, in a sense a putìa 2.0, where a Milanese can order directly at home a real Sicilian cannoli with ricotta cheese, local production and processing. Where a Turinese, eager to try to replicate that epic Pasta alla Norma tasted on holiday in Sicily, can order the fundamental ingredient that never ever would find looking throughout the Piedmont: the hard fired ricotta.

Sicilian Savours is the answer to how we can effectively combine traditional life systems with the digital revolution of this century. What is putìa? The putìa is the culinary workshop near the house, where you can find everything from meats to cheeses, from preserves to wine, from desserts to ready appetizers. Today putìe are slowly disappearing, supplanted by many supermarkets, to the detriment of the uniqueness and quality of local artisanal products. Sicilian Savors recovers the traditional idea of putìa, the coating of a new form, while retaining its substance, relocating it in a market that broadens its scope.

I will skip any preamble, referring to to what has already been written regarding the presence of cart ruts in south-eastern Sicily.As can be seen in other sites around the world, in some cart ruts I visited, in particular in the Cugni district in Pachino, in the Granati Vecchi district in Rosolini and in the Targia district in Syracuse, a clear border can be seen, a sort of frame, next to the grooves, more marked externally, barely noticeable internally. The borders I measured have a width of 14-20 centimeters and a height of 8-10 centimeters. Not all cart ruts have such frames present or particularly evident, regardless of the degree of wear or degradation. They are found above all in cart ruts with less deep grooves. The nickname Clapham Junction that was given by David H. Trump to the Maltese site, derives precisely from the similarity with the famous English railway station. For Sagona these are agricultural furrows and water channels, for Mottershead, Pearson and Schaefer these are abandoned paths due to obstacles and wear. Obviously we do not know what the morphology of the Syracuse and Rosolini territory was at times when the cart ruts were traced, but considering the current context, there certainly would have been no agricultural reason to build them, given the presence of fertile land, springs and fresh water courses just a few kilometers...
